Sweet Carolina's meats are hickory smoked in a 2000 pound Southern Pride convection rotisserie smoker for up to 16 hours at a time. After the smoking process is complete the meat is loaded directly into our restaurant's warmers and then onto your plate. Our signature dish is the barbecue pork shoulder sandwich, smothered in vinegar based barbecue dip and topped with a heaping pile of homemade coleslaw. It's the perfect mix of smokey, tangy and sweet flavors.

We are owned and operated by a native North Carolinian and his “Yankee” wife. Spencer Selle was born and raised in the heart of North Carolina and has been making barbecue magic for 20 years. After moving to New Jersey in 2013 and perfecting his meat smoking skills, he decided to find a way to feed the masses. After several years of trial and error, research, taste testing, and hard work, our food truck was born.
